These tasty little cookies are my current favorite. I call them Candiolis, because they are like Raviolis, but they're filled with candy. Om nom nom. Also they are stupid-easy to make.
Candiolis Recipe:
Roll out two 9" pie crusts.
Place Dove Chocolates (or whatever chocolate strikes your fancy. I'm going to try these with Andes Mints next) evenly across one of the crusts.. I cut the edges off my round crusts (so it was a square, not a circle) and I was able to fit 12 chocolates - 3 across, 4 down.
Put the other crust on top of that one.
Cut into 12 squares.
Use the tines of a fork to seal the edges.
Brush the top of each square with melted butter.
Sprinkle sugar onto each square.
Bake at 450 degrees for approximately 10 minutes.. Mine were done after about 9-1/2 minutes. Watch them closely so they don't burn.
